Nothing like a good Gazpacho on a hot day (end of summer yeahhh :-/) to load up with vitamins and mineral, while enjoying a delicious refreshing cold soup.
Or maybe, you’re like Pepe and you think that’s the weirdest thing ever (can’t please everybody every time).
Anyway, Emi and I whipped up this quick and healthy recipe this afternoon while eating all the fresh produce at the same time :
For 4 people :
10/12 organic early girl tomato (those tomatoes are my favorite, they have a very strong freshly-picked-from-the-vine flavor)
1 organic garlic clove
1/2 small onion organic
1cup of organic fresh basil (the best is the one you buy in a pot and keep growing)
1 medium cucumber organic (cucumber can contain up to 86 pesticides including some causing fertility issue, hormonal disrupter, and cancer, so If there is one ingredient you want to get organic, this is the one)
1/2 a cantaloupe (organic preferably)
Salt to taste
Black pepper to taste
2tbsp olive oil (olive oil has a lot of omega 3 and is one of the healthiest oil) go for it.
Put everything together in a blender or food processor and mix it until smooth. You can add a little water is the consistency is to thick for you, but I didn’t.
Then let it chill in the fridge for 2 hours before eating.
